Cheddar cheese, BBQ pulled chicken and macaroni and cheese. All of it in one sandwich. Just because.
You can get this in Springfield, IL at Cafe Moxo. Special thanks to Stewart Smith of Tyler, TX for this drool inducing pic.
Now go about your business.
Not one to be content with leaving an entire market of building your own versions of things solely to the teddy bear industry, Kuma’s Corner in Chicago allows you to build your own mac and cheese.
And they said democracy was dead.
Special thanks to Eric Mersmann who quite obviously knows his shit.

To quote the source:
"Mac and cheese with a half-pound of fresh chanterelle mushrooms, and topped it all off with crispy french bread crumbles, parmesan cheese and portobello "bacon." It’s pretty."
I’m definitely in agreement with that. Plus it saves me the trouble of having to come up with something even more impressive in terms of description.
If this piques your curiosity, I don’t blame you. Click on the pic to find out more.

By the way, I’m not really a fan of turkey. Deli sliced turkey, sure. But not big old, dry ass bird that lasts for days. Just thought I’d throw that out there.
Happy Thanksgiving everyone!
Friend of mine by the name of Emma R. wanted me to post this pic of a homemade mac she made today using extra sharp cheddar cheese, Pecorino Romano and Gouda. Kinda confused though. Does she think I run some kind of food blog or something? ;)
I’ve been sick so I haven’t really had the energy to go looking for variations of mac and cheese to present to you all but please accept this truly beautiful picture of a Philly Cheesesteak pizza as an apology.

Worst thing that can happen to a person is being hungry and coming across your blog. Very delicious, congratulations on the perfect cheesiness.

Every so often, I like to post something completely off topic here on The Mac and Cheese Files and I think that many of you will appreciate this. If you click on the pic above, you’ll be taken to an article that lists six things you may or may not have already known about the wonderful Mr. Rogers. The world needs more people like him and the picture itself gets me all choked up. I thank him for making my childhood that much more enjoyable and for being an all around stand up guy.
